$65 The Taste Club Argentina and Chile: Warm up with Exciting Wine Finds January is the perfect month to head to South America and taste the exciting wines of Argentina and Chile. Join Chef Nancy Waldeck as she explores delicious food and wonderful wines from the southern hemisphere. We’ll start by visiting Chile and checking out gorgeous wines from the Andes as we enjoy a Seafood Soup accompanied by a pair of zesty whites. Then we’ll move on a Creamy Shallot and Manchego Souffle with some of Chile’s signature reds. Next, we're off to Argentina where we will enjoy Churrasco, or grilled meats, along with Lemon Garlic Roasted Potatoes and some Argentinean standouts like Malbec. We will end our dinner with Deep Dark Chocolate Orange Cake with Dulce de Leche and a matching deep dark red.

Creating Balance and Optimal Health with an Eye Towards Ayurvedic Ayurveda, the 5,000 year old healing science originating in ancient India, is derived from the Sanskrit words “ayus” meaning life or longevity and “veda” meaning knowledge or wisdom. Ayurveda seeks to achieve balance of mind, body, heart, and spirit through psychological insights, yoga, meditation and eating well. There are 3 doshes: body and psychological types that each have different needs in order to achieve balance. Join facilitator Angela Butimer, LPC, RYT, as she guides participants through gaining deeper insight into the psychological, physical, emotional and spiritual Ayurvedic principles, as well as some experiential exercises to achieve harmony and balance within. Chef Nancy Waldeck will then lead you through the culinary principles of Ayurvedic eating for optimal health and show you how to prepare a nutritious and delicious Ayurvedic meal.

Chocolate: A Delicious Journey On his fourth and final voyage to the New World, Christopher Columbus captured a Mayan trading canoe that was loaded with cacao pods. He took the pods home to Spain not knowing what they were. Five years later, he died, never having experienced the pleasures of chocolate. In 1517, Cortez and his men found out and Europe was soon changed forever. Come learn what happened in the early years of chocolate -- and its use as medicine, poison, and even currency. Join Deb Duchon, Culinary Anthropologist from Good Eats and Chef Nancy Waldeck as they share their love of chocolate in a class of savory and sweet chocolate dishes. We’ll start with Mexican Black Bean Chocolate Dip, move on to Chicken Mole accompanied by a pair of delicious sides, and end with an incredible Chocolate Chile Pecan Cake with Chocolate Chile Glaze - all created with a wealth of dark chocolate goodness. Chef Nancy Waldeck will lead you on a whirlwind tour of Merlot from California to Australia as we explore the styles and contrasts of this mecurial wine. We’ll start by sampling some of California’s best as we enjoy a individual warm Crab Gratin, moving on to Washington State for a delicious Salad with Bacon and Blueberries and topped with Cheddar Dressing. Along the way we will make a quick stop in Australia and then of to our main course - a pair of entrees featuring Salmon and Pork while sampling a couple of beautiful Bordeaux and end in Italy where we will enjoy unique reds with a luscious Dark Walnut Cake.

The Taste Club: Traveling to South Africa in March Come learn about the beautiful wines of South Africa with Chef Nancy Waldeck as she tours you through the country, stopping to enjoy incredible food and wine along the way. We will start with one of South Africa’s signature whites, Chenin Blanc, and do a taste and compare with traditional and contemporary wine styles. We will accompany the whites with a beautiful African appetizer and then move on to a pair of Sauvignon Blancs with our salad course. A Braai (or barbeque) will follow, with Sosties, Lamb and Chicken and we’ll enjoy a quartet of reds with our main meal. Dessert will be Banana-Coconut-Lime Cake topped with Roasted Pineapple and a special dessert wine.
